Baby Food Cake
Ingredients:
2 cups self-rising flour
2 cups sugar
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg
1 cup oil
1 large or 2 small jars baby food with tapioca (plum, prune, blueberry)
3 eggs
1 cup nuts, chopped
Instructions:
1. Heat oven to 350 degrees. Grease bundt (or tube) pan. Dust with confectioners sugar.
2. Mix together all dry ingredients. All oil and baby food.
3. Add eggs, one at a time.
4. Add chopped nuts.
5. Bake at 350 degrees for 55-60 minutes.

Chocolate Pound Cake
Ingredients:
2 sticks butter
1/2 cup shortening
3 cups sugar
5 eggs
3 cups flour (plain)
1/2 tsp baking powder
1/4 tsp salt
1/4 cup cocoa
1 1/4 cup milk
1 tsp vanilla
Instructions:
1. Heat oven to 300 degrees. Grease tube pan. Dust with confectioners sugar.
2. Cream together butter, shortening, and sugar.
3. Add eggs, one at a time, mixing after each.
4. Sift together dry ingredients.
5. Mix milk and vanilla.
6. Alternate adding dry ingredients and milk mix to creamed mixture.
7. Bake at 300 degrees for 1 1/2 hours.

Cranberry Delight
Ingredients:
3 cups chopped apples
2 cups raw cranberries
1 1/4 cups sugar
1 1/2 cups uncooked oatmeal
1/2 cup brown sugar
1/3 cup flour
3/4 tsp salt
1/2 cup melted butter
1/3 cup chopped nuts
Instructions:
1. Combine cranberries and apples in a 9-inch pie plate and mix together.
2. Add white sugar and mix
3. In a separate bowl, combine oatmeal, brown sugar and flour. Mix
4. Stir in melted butter
5. Pour the oatmeal mix on top of the apples, cranberries and sugar
6. Sprinkle mixed nuts on top of the oatmeal
7. Bake at 350 degrees for one hour.
Comments
Serve with whipped cream or vanilla ice cream.

Pineapple Snack Cake
Ingredients:
1 (18 1/4 oz) yellow cake mix - dry
1 can (20 oz) pineapple (undrained)
2/3 cup dark brown sugar
Instructions:
1. Spray jelly roll pan.
2. With spatula, mix cake mix and pineapple.
3. Stir until well mixed.
4. Spread into pan.
5. Sprinkle brown sugar over batter.
6. Bake 350 degrees for 25 minutes (sides should be golder brown).
7. Cool before cutting into squares.

Quick Microwave Fudge
Ingredients:
1 pound box confectioners' sugar
1/2 cup cocoa
1/4 cup milk
1/2 cup margarine
1 tsp vanilla extract
2/3 cup chopped nuts
Instructions:
1. Mix sugar and cocoa in a mixing bowl.
2. Make a well in the sugar cocoa.
3. Put milk and margarine in well. DO NOT STIR>
4. Microwave on high for 2 minutes.
5. Stir to mix well.
6. Add vanilla and nuts; stir until blended.
7. Pour into a greased container.
8. Place in freezer for 20 minutes or refrigerator for 1 hour.
9. Cut and serve.
10. Store in refrigerator.
Confectioners' sugar may need sifting to eliminate all the lumps.
