Peanut Blossoms
Ingredients:
1/2 cup shortening
3/4 cup peanut butter
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
1 Tbsp millk
1 tsp vanilla
1 1/2 cups unsifted all-purpose flour
1 tsp baking soda
1/2 tsp salt
Granulated sugar
9-ounce package Hershey's Kisses (about 48)
Instructions:
1. Cream shortening and peanut butter; add sugar and brown sugar.
2. Add egg, milk, and vanilla; beat well.
3. Combine flour, baking soda and salt; gradually add to creamed mixture, blending thoroughly.
4. Shape dough into 1-inch balls; roll in granulated sugar.
5. Place on ungreased cookie sheet; bake at 375 degrees for 10-12 minutes.
6. Remove from oven; immediately place unwrapped Kiss on top of each cookie, pressing down so that cookie cracks around the edge.
7. Remove from cookie sheet; cool.
Yield: about 4 dozen cookies

Icebox cookies
Ingredients:
1 lb butter
1 cup sugar
1 cup brown sugar
6 cups flour (may need to add 1 cup)
2 cups chopped pecans
2 eggs
1 tsp soda
1 tsp cinnamon
1 tsp salt
Instructions:
1. Cream butter and sugar
2. Add eggs, one at a time
3. Sift dry ingredients and add to egg mixture
4. Add nuts and shape into 7 rolls.
5. Wrap in waxed paper and refrigerate overnight.
6. Slice and bake on ungreased pan for about 12 minutes (350 degrees)
Yield: 200 cookies

Snickerdoodles
Ingredients:
1/2 cup butter
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1 tsp soda
1/4 tsp salt
Roll in:
2 Tbsp sugar
2 tsp cinnamon
Instructions:
1. Mix first 8 ingredients
2. Roll into 1 inch balls
3. Roll balls in sugar/cinnamon mixturee
4. Bake 8-10 minutes at 400 degrees
Yield: 6 dozen

Chocolate Mint Cookies
Ingredients:
2 1/2 cups flour
1 1/2 Tbsp baking powder
3/4 tsp salt
1 1/4 cups sugar, divided
3/4 cup vegetable oiil
2 eggs
1 tsp vanilla
1 10 oz package mint-flavored semisweet chocolate chips OR 1 12-oz package mint patties, finely chopped
Instructions:
1. Preheat oven to 350 degrees.
2. In small bowl, combine flour, baking powder, and salt; set aside.
3. In a large bowl, combine one cup sugar and oil. Mix well. Beat in eggs and vanilla.
4. Gradually add the flour mixture. Stir in chips or chopped patties.
5. Chill dough in refrigerator for about 30 minutes.
6. Take rounded teaspoons of dough, shape into balls, and roll in remaining sugar.
7. Place on greased cookie sheet and bake 8- 10 minutes.
Yield: 5 1/2 dozen
